I found no key to tag places that have a CO2 monitor. In those #covid19 times, it seems like a good idea to know what bars or restaurants check they’re well ventilated.
What tag would you recommend?

Usually only a significant sensing station itself is directly added.
Maybe you can add this common format to the PoI itself to show it has that.

The problem is that it’s not a stand-alone station, but rather a meter that sits into an an amenity or an office, so I guess it would make more sense to add a key=value to those items instead.
I have no experience proposing a new tag, and it seems a bit involved :-/
