When mapping a route, there are options for “CAR (OSRM)” and “CAR (Grasshopper)”
I’m curious as to the meanings of OSRM and Grasshopper in this context?

Yep, it’s pretty much just different software for route calculation.
Both are using OpenStreetMap data, but have somewhat different assumptions, preferences and algorithms built in, so you may occasionally get different route suggestions.
