Which keys will accelerate JOSM in edit mode and the next question is how to undo that mode ?
Mine is crazy but I don’t know why or what made it into that mode.

Maybe you mean Viewport Following ? Ctrl+Shift+F
The program moves the pointer the distance between the last 2 nodes, nice by drawing ways, but unpleasant when drawing buildings and other details.

I solved it, logically by reinstalling JOSM, after removing all JOSM data from the memory of the PC.

Does that mean that disabling “Viewport Following” did not help? Your description seems to match this mode.
