Czy takie tagi można wycinać, czy mają one jakieś sens?

Każdy tag ma sens. Można np. fajną mapkę zrobić z drogami gdzie nie ma ścieżek rowerowych. Tag oneway=no też mówi nam o tym, że ta droga na pewno jest dwukierunkowa.
Nie usuwałbym tego.
